Baked Salmon Cakes

Ingredients

Serves 6

1pound fresh salmon (skinless boneless) You can also use canned Salmon
½ cup Mayo
2 large Eggs, cracked and beaten
2 tablespoons Dijon Mustard
2 teaspoons Salt free (Mrs. Dash)
½ Cup cooked white Rice
¼ cup lemon juice
1 ½ teaspoon old Bay
1 ½ teaspoon Dried chives
2 Tablespoons Mustard powder
1 teaspoon granulated onion
1 teaspoon granulated garlic
½ cup panko breadcrumbs
1 Tablespoon olive oil

Directions

Preheat the oven to 425°F.

Place fresh salmon on lightly oiled sheet pan. Cook for 15 min until salmon is pink and

cooked, allow to cool before mixing with other ingredients.

In a large bowl, break the cooked salmon into bite size pieces or flake the drained and canned salmon. (You do not need to cook canned salmon it can be used directly from can)

Add the remaining ingredients and gently mix well with hands or spatula. Form into 6 patties.

Place the salmon patties on an oiled baking sheet. Bake for 15 minutes, turn, and continue baking another 5 minutes until golden brown on both sides. Serve hot with lemon slices and tartar sauce.

Nutrition Notes

  • Salmon is an excellent source of Omega-3 Fatty acids. The human body does not make this nutrient and we must get it from sources such as Salmon. Using canned salmon helps your body function optimally and helps you save money. 
  • Salmon is also a good source of protein which is needed for healing and maintaining muscle mass.
